It’s been the first Sunday in advent and the festive season madness will begin soon. Christmas is about enjoyment and food is an important part of this. We all tend to overindulge during the holiday season. Holiday mode is that time to relax and enjoy ourselves but it will also be that time to be careful not to overeat on all those yummy treats that come with holiday season. If you want to stay a little conscious of what you are eating, you can try this green veggie loaded soup as a starter for Christmas dinner or have them as a healthy alternative to balance the overindulging in rich foods, sweet treats and alcohol.

Spinach cucumber and zucchini soup

Ingredients
- 300 g spinach
- 300 g cucumber
- 300 g zucchini
- 1/2 onion, diced
- 1 bunch dill
- 800 ml stock
- juice of half a lemon
- 1 tbsp oil
- red peppercorns (optional)
- natural yoghurt to serve (optional)
Instructions
- in a sauce pan, saute onions
- add spinach and saute a few more minutes
- add cucumber, zucchini and stock
- cook on medium heat for about 10 minutes
- add oil
- blend soup until smooth
- season with salt and pepper and lemon juice
- serve with natural yoghurt and red peppercorns (optional)
