Spinach cucumber and zucchini soup

Ingredients
- 300 g spinach
- 300 g cucumber
- 300 g zucchini
- 1/2 onion, diced
- 1 bunch dill
- 800 ml stock
- juice of half a lemon
- 1 tbsp oil
- red peppercorns (optional)
- natural yoghurt to serve (optional)
Instructions
- in a sauce pan, saute onions
- add spinach and saute a few more minutes
- add cucumber, zucchini and stockĀ
- cook on medium heat for about 10 minutes
- add oil
- blend soup until smooth
- season with salt and pepper and lemon juice
- serve with natural yoghurt and red peppercorns (optional)
