It’s been the first Sunday in advent and the festive season madness will begin soon. Christmas is about enjoyment and food is an important part of this. We all tend to overindulge during the holiday season. Holiday mode is that time to relax and enjoy ourselves but it will also be that time to be careful not to overeat on all the yummy treats that come with holiday season. If you want to stay a little conscious of what you’re eating, you can try this nutrition loaded beetroot soup as a starter for Christmas dinner or have it as a healthy alternative to balance the overindulging in rich foods, sweet treats and alcohol. jump to recipe

Beetroot and fresh horseradish soup

Ingredients
- 1 small onion, diced
- 2 celery sticks
- 500 g beetroot
- 800 ml vegetable stock
- 1 tbsp red wine vinegar
- 1 tbsp horseradish
- 2 tbsp Dill
- natural yoghurt to serve (optional)
Instructions
- heat the oil in a frying pan, add onion and fry until softened
- add celery and fry for a few more minutes
- add the beetroot and stock and simmer for 10 minutes
- Blend the soup until smooth
- add vinegar, horseradish and dill and heat for a few minutes
- season with salt and pepper
