Instructions

  1. heat the oil in a frying pan, add onion and fry until softened 
  2. add celery and fry for a few more minutes
  3. add the beetroot and stock and simmer for 10 minutes
  4. Blend the soup until smooth
  5. add vinegar, horseradish and dill and heat for a few minutes 
  6. season with salt and pepper
